Grapefruit with Avocado Cream

Every Super Bowl and most Sundays during footbal season my kids ask me to make guacamole and I almost always have a couple avocados left over. Today I decided to create my own version of a grapefruit and avocada salad with the extra ingredients I had on hand. I must say this recipe is really tasty, super simple to prepare and the cheerful colors pop against a dreary gray winter sky.
Ingredients
1 large grapefruit, peeled, sectioned with most of the pith removed.
2 medium-sized, ripe avocados, cut in half, peeled with pit removed
1/3 cup olive oil
1/2 tsp sea salt
1-2 Tbsps lime juice (optional)
Cilantro, chopped for garnish (optional)
Directions
In a medium-size mixing bowl, combine all the ingredients except for the grapefruit.
Using a hand mixer or blender (I don't like using a blender as much for this recipe because I find it a pain in the butt to get all the avocado mixture out from the bottom of the blender) mix the ingredients until they form a smooth texture.
Arrange the grapefruit on individual plates and spoon the avocado mixture on top of the grapefruit, sprinkle with sea salt and pepper to taste, cilantro (optional) and serve.
